Namazake

Namazake (生酒) is unpasteurised Japanese sake, or nihonshu (日本酒), prized for its fresh, lively and expressive character. Unlike most sake, which undergoes heat pasteurisation known as hi-ire (火入れ) to stabilise flavour, namazake retains a bright, delicate profile with vivid fruit notes, a soft texture and an energetic finish.
