Nestled in the mountain village of Hazaki, east of Kani City in Gifu, Hayashi Shuzo has been brewing sake since 1874. Founded by the ninth-generation Ihei Hayashi, the family-run brewery carries forward a heritage rooted in this land since 1612. Alongside its long-loved Tomikoshi sake, it produces Minotengu—a distinctive expression of Mino’s local character.
