The Story of Minakuchi Shuzo
Minakuchi Shuzo (producer of Nikitatsu)
was established in 1895 in Dogo-Matsuyama, Ehime
Prefecture 松山市,愛媛県 ,located on Shikoku
Island in western Japan. Ehime is known for soft,
pure water and its signature sake rice Shizuku-hime,
which produces smooth, elegant, gently sweet.
Production
At Minakuchi Shuzo, sake production is a refined balance of traditional craftsmanship and precise modern control, rooted in over a century of brewing heritage.
The brewery carefully selects premium sake rice, including locally cultivated varieties such as Shizuku-hime, combined with soft, mineral-rich water from Ehime. These elements are essential in achieving the brewery’s signature smooth, elegant, and gently sweet profile.
